Ginger Chicken Udon

Ginger Chicken Udon, is fragrant and light noodles with chicken, vegetables, and a homemade sauce.

Since becoming a type 2 diabetic, I have learned that Asian food has a high sugar content with its pre-made sauces. I know food has a sugar content, but I am trying to make it lower. I am on the lookout to find recipes that I can make at home which have flavor and texture.

When I’m at Wagamama this is my go-to dish. I decided to recreate the dish at home and I was shocked at how quickly this recipe takes to make. After being at the gym, I needed something quick and easy, and it took 30mins to prep and cook the dish.

This is basically just an Asian-style chicken noodle dish. It’s a perfect combination. Udon noodles are thick, filling, and comforting, with fresh vegetables, and tender chicken, and the sauce was light with a combination of soy sauce, mirin, and rice vinegar. I think this is a dish I will be keeping in my mind to make as it’s quick and easy with a lot of flavors.

I decided to serve the dish with ITSU Pork Gyoza, which I steamed in my bamboo steamer.
